 Ingredients
300g lean rump steak
2 lebanese cucumbers, sliced
1 red capsicum, sliced
1/2 red onion, sliced
2 tomatoes, cut into wedges
2 large handfuls bean sprouts
1 handful Vietnamese mint or coriander leaves, chopped
Dressing
juice from 2 limes
2 tablespoons fish sauce
3 tablespoons sweet chilli sauce
2 garlic cloves, crushed
Season the steaks with some freshly ground black pepper. Cook the steaks in a very hot frying pan until medium-rate (a couple of minutes each side, depending on the thickness of the steaks). Remove the steaks from the heat and allow to rest for 5-10 minutes.
Combine the cucumber, capsicum, onion, tomato, bean shoots and herbs in a serving bowl. Slice the steak into thin strips and add to the salad. Mix the dressing ingredients together, toss through the salad and serve.
