My Famous Pancake Recipe! Back |
 You will need:
- 30-40g Uncle Toby's Traditional or Quick Oats
- 4-5 Eggs
- Mixed Spice
- Splenda
- Spray Rice Bran Oil (or Olive)
To start mix the oats, egg whites (1 yolk is fine) and mixed spice in a blender for about 30 secs. Next spray a non-stick pan with a light coating of the oil. Carefully pour the mixture into the pan, and shape like a pancake. I usually get 4 thin pancakes, although you could make one big think one. Once the mixture is in the pan, sprinkle a sacket or two of splenda on the pancake. They cook quite quickly so like a normal pancake flip when ready. Then ENJOY!
Variation: Of course if you are not preparing for a show, try adding some different ingredients to the recipe. I loooove adding a banana or a green apple to the blender for a flavoured pancake. I also love adding a small scrape of peanut butter (be careful...not too much) to the pancake, then rolling it up! Yummo. Lastly, they could be used as a healthy treat meal, by having them with a bit of ice-cream. That way you won't be blowing your healthy eating plan out, and will also be getting in some quality nutrition. Remember adding any of these changes will add more sugars/fats/calories, so watch your serving sizes. |
